Our brioche is leavened using a homemade French levain starter, cultivated to bring out deep, nuanced flavors. The brioche has deep roots in French culinary tradition, a pastry born from the marriage of rich butter and soft dough. Its origins trace back to the Norman region of France in the Middle Ages, where dairy was abundant, and bakers began experimenting with enriched doughs.

One popular legend ties the brioche to Queen Marie Antoinette, who is often (though incorrectly) credited with saying, "Let them eat cake!"—referring, some say, to brioche. While this story has been debunked, it reflects how brioche became synonymous with luxury and indulgence.
