HOW IT ALL STARTED
La fabrique du Boulanger was opened in November 2016 by Gilles Vandevivere and Barbara Cannamela. Their collaboration has nurtured a business renowned for its dedication to traditional artisan baking methods and a commitment to organic, high-quality ingredients. Like a jewel in Provence’s artisanal tapestry, this enchanting bakery, in Saint-Martin-De-Crau, weaves a fabric of culinary delight with its exquisite array of organic offerings. Within its welcoming walls, the bakery presents a lush cornucopia of breads, each a testament to the region’s verdant fields and rich earth. From the crusty embrace of traditional loaves to the soft sigh of brioche, every crumb epitomizes the art of baking.

OUR CRAFT
La Fabrique du Boulanger is driven by a mission to revive and honour traditional baking craftsmanship. Emphasizing simplicity and authenticity, the bakery avoids additives and focuses on high-quality, organic ingredients to produce healthy and delicious products that remind customers of the nostalgic taste of yesteryear’s bread. Our baking area is equipped with state-of-the-art organic processing equipment and customer-facing areas, designed to welcome patrons who wish to enjoy fresh baked goods straight from the oven.

Our offering.
Our French location offers a beautiful and welcoming space for culinary lovers and enthusiasts to enjoy delicious baked goods and creations. La Fabrique du Boulanger has the region’s largest range of organic certified breads, including options made from ancient grains and gluten-free varieties. As well as a variety of tasty pastries, we offer an extensive lunch menu that caters to diverse tastes.
Gilles Vandevivere and Barbara Cannamela are the sparkling duo behind Kneady Organic Bakery.
MEET THE TEAM
Barbara and Gilles see their breads as wonderful ambassadors of French gastronomy. Shaped with authenticity, they are a combination of the soils’s bounty and the expertise of an ancestral French craft. The couple’s roots are set deep in tradition; but with eyes on the horizon, they are redefining what it means to be a bakery in the modern world. Inspired by Los Angeles’s vibrant culinary scene and health-conscious ethos, they have decided to extend their artisanal reach across the Atlantic. Embracing the city’s dynamic food industry, they have chosen to rent a space in a modern ghost kitchen near Echo Park, one of the most up-and-coming neighbourhoods in Los Angeles.

Gilles Vandevivere
Co-Founder
Kneady Bakery co-founder Gilles, has the prestigious title of Master Baker which is recognized as the most distinguished bakery qualification in France. His leadership in some of Ireland’s and France’s most reputable “maisons de boulangerie” provides us with unparalleled expertise in baking. Gilles is steeped in Provence’s rich culinary heritage but also stands as a responsible contemporary baker. Respectful of nature, Gilles’s breads express themselves freely.

Barbara Cannamela
Co-founder & CEO
Barbara is our other co-founder and CEO of Kneady Bakery, leverages her extensive experience in business development to bridge the gap between traditional French cuisine and modern consumer preferences. A native of Cannes, she’s inherited the French tradition of the art of hospitality, with its emphasis on happiness and conviviality. She likes to share the recipes that make the “Maison” successful. Inspired by the Mediterranean’s sweetness of life, she welcomes her customers with generosity and simplicity.
