Each ingredient is of the highest quality, sourced from France and milled by the renowned Minoterie Dupuy Couturier under their premium BORSA brand. This mill’s patented milling process ensures flours with unparalleled nutritional and technological properties, elevating every loaf of Pain de Méteil to an artisanal masterpiece.

Once upon time… the Méteil! 

Pain de Méteil is a traditional French bread made from a mixture of rye and wheat flours, typically in equal proportions (50% rye and 50% wheat). The name “méteil” originates from the Old French term mestel, which referred to a mixed crop of rye and wheat grown together in the same field. Historically, this blend was a practical choice for farmers, ensuring a dependable harvest even in challenging conditions.

This bread is known for its rustic character, combining the hearty, tangy flavor of rye with the lightness and elasticity of wheat. Pain de Méteil is typically leavened with a rye levain starter, which not only enhances its complex flavor but also gives it a slightly denser texture and longer shelf life compared to pure wheat bread.
