This traditional bread is leavened with a homemade einkorn levain starter, which imparts a subtle tang and a wonderfully moist crumb to the bread.

Einkorn, or Petit Épeautre, has a long and storied history in France, where it has been cultivated for centuries. How to store it?

Store in a cool place into a refrigerator or a wine cellar. You can freeze it and take one slice out at a time. Toast the slices (still frozen) in the toaster and enjoy!
