Introducing our Chestnut Bread with Pumpkin and Sunflower Seeds, an even heartier and more flavorful variation of our signature chestnut bread. This unique creation combines the earthy sweetness of chestnut flour with the crunchy, nutty goodness of pumpkin and sunflower seeds, adding both texture and nutritional value to every slice.

Made with a base of mostly chestnut flour, our bread is naturally leavened with a rice levain starter, which we craft ourselves to ensure the perfect balance of flavor and digestibility. The addition of pumpkin seeds and sunflower seeds enhances both the taste and texture, bringing a satisfying crunch and a boost of healthy fats, vitamins, and minerals.

Once upon time… the Chestnut!

Chestnuts have long been a beloved ingredient, especially in the mountainous regions of Europe, where they were historically referred to as "the bread of the poor" due to their ability to sustain communities during harsh winters. Their earthy sweetness and nutritious qualities make them the perfect base for our bread, providing both substance and flavor.

The addition of pumpkin seeds and sunflower seeds takes this traditional bread to a new level. Pumpkin seeds, with their rich, nutty flavor, and sunflower seeds, known for their mild, slightly sweet taste, not only add texture but also enhance the bread’s nutritional profile. These seeds are packed with healthy fats, antioxidants, and minerals, providing an extra boost of energy and vitality.

Together with the chestnut flour and our homemade rice sourdough starter, these seeds offer a harmonious balance of flavors, paying homage to both the rustic simplicity of French baking traditions and the wholesome, nourishing qualities of nature’s finest ingredients.

As with all our breads, we use only the finest, additive-free, enhancer-free ingredients, and our flours come exclusively from trusted French mills. The combination of chestnut flour’s sweet, nutty flavor with the seeds’ rich texture creates a bread that is perfect for breakfast, a savory snack, or even as an accompaniment to your favorite meals.

This bread is ideal for pairing with cheeses, charcuterie, or simply enjoying with butter or honey. Its deep flavor and hearty texture make it a nourishing choice for those looking for something both wholesome and indulgent.

How to store it?

Store in a cool place into a refrigerator or a wine cellar. You can freeze it and take one slice out at a time. Toast the slices (still frozen) in the toaster and enjoy!
