Once upon time... the Authentic Kneady Signature!

In a bustling bakery in Los Angeles, French baker Gilles set out to share the essence of his homeland through his creations. Having spent decades working alongside the Minoterie Dupuy Couturier in France—a pioneering mill that specializes in organic-certified wheat and innovative milling techniques—Gilles had developed a deep respect for the quality and sustainability of the ingredients he used. This long-standing collaboration had been the foundation of his bakery in France, and when he brought his passion to Los Angeles, it was only natural to continue this tradition.

Gilles envisioned a bread that would honor the partnership with Minoterie Dupuy Couturier while offering something unique to his new community in California. The result was the Kneady Authentic Signature: a bread made with exceptional whole wheat flour produced using the mill’s patented Borsakowsky process. This technique carefully preserves the wheat’s essential nutrients by brushing the grain and reintegrating the protein-rich core back into the flour.

The Kneady Authentic Signature is leavened with a house-made rye levain starter, which enhances its deep, earthy flavors and ensures optimal digestibility. Its dark, tender crumb offers a rich, nutty taste that is as satisfying as it is nourishing. How to store it?

Store in a cool place into a refrigerator or a wine cellar. You are going to keep it for more than 5 days.

Sea salt

- Filtered water

*All flours that we knead come from French farming and are manufactured in France by La Minoterie Dupuy Couturier. Undergoing USDA Organic certification.
