Introducing our Chestnut Bread, a unique and wholesome creation made from mostly chestnut flour, with a touch of buckwheat flour to balance its rich, nutty flavor. This bread combines the earthy sweetness of chestnut flour with the light, slightly tangy taste of a rice levain starter, which we prepare ourselves, ensuring the highest quality and purity in every loaf.

Our chestnut flour is sourced from the finest French producers, carefully milled to preserve its full flavor and nutritional value. We use only the best, most natural ingredients—no additives, no enhancers—allowing the natural character of the flour to shine through. A small amount of buckwheat flour is added to soften the chestnut’s sometimes intense flavor, creating a balanced, rich loaf with a wonderful texture and a slightly sweet aftertaste.

Once upon time… the Chestnut!

Chestnuts have long been a symbol of nourishment and sustenance, particularly in mountainous regions of Europe. Once considered "the bread of the poor," chestnuts were an essential food source, providing carbohydrates, fiber, and vitamins. The chestnut flour used in our bread is made from high-quality chestnuts grown and harvested in the French countryside, offering a distinctive earthy sweetness that can only come from the land.

Historically, chestnuts were often milled into flour and used in a variety of breads and baked goods. Paired with buckwheat, another traditional French flour known for its earthy, slightly nutty flavor, this combination creates a bread that reflects the simple, rustic nature of French culinary traditions.

The use of a rice levain starter is an ancient technique that adds complexity and tenderness to the bread. Rice is naturally gluten-free, which makes this method perfect for those with dietary restrictions while still providing a light, flavorful crumb.

This bread is naturally leavened with buckwheat levain, a technique that provides a delicate, slightly tangy flavor and makes the bread easily digestible. Its soft, slightly moist crumb and slightly nutty crust make it a perfect choice for both savory and sweet pairings, whether with cheese, charcuterie, or even a simple drizzle of honey.

How to store it?

Store in a cool place into a refrigerator or a wine cellar. You can freeze it and take one slice out at a time. Toast the slices (still frozen) in the toaster and enjoy!
